Nel 1894 Luigi Lavazza rilevò la Paissa & Olivero, una piccola drogheria nel cuore di Torino. Attraverso un uso sapiente della miscelazione, la drogheria Lavazza si espande e, necessitando di uno spazio maggiore, si trasferisce nel 1910 in via San Tommaso 10, ove si trova attualmente un bar e un ristorante di proprietà della famiglia. Superando le difficoltà della Grande Guerra, Luigi Lavazza, la moglie Emilia e i figli costituiscono la società di fatto Luigi Lavazza, che nel novembre del 1927 diventerà società per azioni con capitale di 1.500.000 lire.
